Hey Everyone!  I just wanted to upload one of my “One Pot Wonder” recipes that always wind up coming out a little different, but ALWAYS delicious, and very low fat.

Check out the labels below and you can see that there is only 19 grams of fat in the entire pot!

I took pictures of all the ingredients below for your reference, but it’s really up to you on what you want to add to this dish (as long as its fresh veggies).

1 pound of Ground Natural Pork
2 whole carrots – diced
2 celery stalks – diced
1 medium onion – diced
1 green pepper – diced
1 spicy pepper – diced
6 cloves of garlic – chopped
2 fresh tomatoes – diced
1 can of low sodium tomatoes (you can use fresh too)
1 can of rotelle spicy tomatoes
10+ leaves of fresh basil – chopped
1 package of fresh spinach
2 tablespoons of extra virgin olive oil
Pepper to Taste (No salt, since there is some sodium in the canned tomatoes) 
1 cup of red/brown rice (cooked)
The rice is optional.  The pork dish is very tasty on its own, but if you want a few carbohydrates and something to soak up the juices, then I suggest the rice!  Adding rice will add an additional 1.5 grams to 2 grams of fat per cup of cooked rice.

This recipe is so easy.

Saute the Carrots, Celery, Onion, Peppers, and Garlic in a large pot or dutch oven.  After all ingredients are cooked down (like the picture below), add the ground Pork and saute until Pork is cooked.  Add the fresh chopped basil and all of the tomatoes.  Simmer all ingredients for about 45 minutes of medium/low.  Cook the rice (it takes about 45-55 minutes for brown/red rice to cook well),  Add the entire package of fresh spinach to the pot and let steam for a couple of minutes until wilted.  Mix all the ingredients together and let simmer for another 10 minutes.  Serve over rice and ENJOY!
