Healthy Recipe – Summer Greek Style Couscous Salad #healthyrecipes #couscous #recipe #healthy

Are you looking for a tasty, healthy, delicious couscous recipe?  Well here is one for you that I love to make.  It is super easy to make and is a great side to a healthy meal or fantastic on its own!

Ingredients for Couscous

1 ¼ cup water
1 ½ cup couscous
10 oz package of grape tomatoes cut in half
½ cup kalamata olives cut in half
3 tablespoons olive oil
2 ½ ounces of reduced fat feta cheese
Juice of 1 lemon
Chopped Fresh Basil
Salt to taste
5 chopped Greek peppers (optional)
½ chopped Cucumber (optional)

Bring water, 1 tablespoon of olive oil, and lemon juice to a boil. Then add couscous, cover, and remove from heat.

Once water is dissolved fluff with fork and add the rest of the ingredients. Stir and serve. Happy healthy eating!
